Stancija San Antonio was established in 2008 in Vodnjan, and the first olives were planted in 2009.
We cultivate 7,000 olive trees, which are grown organically, and the oil is certified organic with a globally recognized certificate. The most well-known varieties include: Buža ženska vodnjanska, Karbonaca, Istarska bjelica, and Leccino.
The olive groves are located at approximately 100 meters above sea level and about 800 meters from the sea. They are situated in areas where olive groves existed during the Roman era, extending back to the time of the ancient Etruscans. Roman military commanders were granted land in this area covering approximately 50 hectares (710 x 710 m), known as centuriae or centuriations. Each centuria was bounded by a road, so in the area extending from Žminj to Valtura, we still have Roman centuriations today. These extend across our olive groves, and the boundaries of the centuriations can be clearly seen on Google Earth.
How We Transformed Abandoned Olive Groves into Today's Exceptionally Fertile and High-Quality Olive Groves
We cut down old and burned trees to the ground, and after two years, new shoots emerged, which were dug up along with their roots (from one large root, we can create up to 8 new shoots). This method of growing shoots is extremely important because it allows us to preserve the indigenous olive varieties that have grown in this area for generations. They are adapted to this climate, temperature changes between day and night (Vodnjan records summer temperatures of 32 degrees during the day – 12 degrees at night), are more resistant to diseases and pests, and yield the best results in both quantity and quality of olive oil.
Olive Oil Mill
In 2014, we opened the olive oil mill and have been processing olives for ourselves and others since then. We exclusively sell oil from our own olives; we do not purchase olives or oil from other producers.
We are proud to have one of the most modern olive oil mills in Europe. We produce exclusively extra virgin olive oil (EVOO).
Our Extra Virgin Olive Oils
We produce four monosort oils and one blend, from varieties specific to the Istrian region. The quality of our oils is internationally recognized; over the past three years, we have won more than 20 gold medals at world and domestic competitions.
